Banana Bread Traybake

Preamble

My bananas are always going bad and that is very cringe so make banana bread before they go gross and mouldy. This recipe produces 10 squares of banana bread, so I typically double the recipe and share with friends :)

Supplies

Ingredients
  • 140g Unsalted Butter
  • 140g Caster Sugar
  • 2 Eggs
  • 1 tsp. Vanilla Extract
  • 140g Self-Raising Flour
  • 1 tsp. Baking Powder
  • 2-3 Bananas
  • 150g Milk Chocolate

Method

  1. Pre-heat (fan) oven to 180 degrees
  2. Mix the butter and sugar in a large bowl
  3. Add the sugar, mix
  4. Introduce the egg, mix
  5. Introduce mashed banana, mix
  6. Add the vanilla extract, mix
  7. Add dry ingredients, mix
  8. Bake for 35 minutes at 180 degrees
  9. Allow to cool in tray for 20 minutes
  10. Melt chocolate in microwave-safe bowl, stirring every 30 seconds to prevent burning. Take chocolate out of microwave before fully melted, using the residual temperature to finish the melting process.
  11. Spoon the melted chocolate over the banana bread, using a large spoon to smooth
  12. Wait to cool, then use bread knife to section
